Buttermilk Pancakes

     I love buttermilk pancakes!  They always cook up so light and fluffy.  I make up a huge batter on Monday and it lasts the whole week.  I keep the leftover batter in the refrigerator and add a tiny bit of water to thin it out a bit.  Stir well before you cook them.  You can double and triple this recipe to fit your needs.  Enjoy!

Buttermilk Pancakes:

1/2 c buttermilk
1/4 t soda
2 T sugar
1/4 c flour
1 1/2 t lard (melted)
1 egg

Mix ingredients together in a bowl until smooth.  Heat 1 T butter in a skillet over medium heat until melted.  Pour batter in to make pancakes.  When the batter gets nice and bubbly flip to cook the other side.  Serve with butter and warm syrup.
