Homemade Hashbrowns

     Hashbrowns are simple to make and they taste delicious with a slice of fried ham and tomato.  I make this dish when I need to make quick breakfast.

Homemade Hashbrowns:

1 large potato
1 egg
salt & pepper to taste
1 T oil

Peel the potato and grate with a cheese grater.  In a small bowl beat the egg.  Add the shredded potato, salt & pepper.  Heat the oil in a cast iron skillet on medium heat.  Place a small amount of the potato mixture in the pan and press it down into the shape of a circle with a fork.  Fry for 2-3 minutes on each side until the patty is golden brown.  Continue frying the rest of the potato mixture.  Serve immediately.
