Sourdough Starter

     I believe that everyone should have sourdough starter on hand.  There are so many things that you can make with it.  (Cake, biscuits, bread, pancakes, etc..)  Here is a recipe for making sourdough starter.  I keep mine in the refrigerator and feed it every couple of days.  (IMPORTANT:  DO NOT LET METAL OF ANY KIND COME NEAR YOUR STARTER!!!)

Sourdough Starter:

2 large potatoes
water
2 c flour
cheesecloth

Peel the potatoes and place them in a glass bowl or crock covered with water.  Let them sit on your counter overnight.  In the morning, discard the potatoes & all but 4 cups of the potato water.  Slowly stir in the flour.  Cover with cheesecloth and let it sit on your counter for 2 days before you use it.
