Rockfish

     My mom gave me some rockfish a while back and I decided to make it for dinner.  It tastes delicious made into fish tacos or breaded by itself.  I breaded it for dinner.  Here is the recipe:

Rockfish:

2 rockfish fillets
salt & pepper to taste
1 T parsley
1/4 t cajun seasoning
1/2 c panko bread crumbs
2 T olive oil

Heat up the olive oil over medium heat in a skillet.  Generously sprinkle salt, pepper, cajun seasoning & parsley over the fish.  Press the bread crumbs onto both sides of the fish.  Gently place the seasoned fish into a skillet & cook both sides until it starts to fall apart when poked with a fork.
