Simple Veggie Stir Fry

Toward the end of the week, I gather up all of the veggies that I have left in my refrigerator and try to find a recipe to use them up.  Stir fry is a very simple dish to make and a great way to use left over veggies.

Simple Veggie Stir Fry:

Broccoli (chopped)
Carrots (chopped)
Kale (chopped)
Sugar snap peas
Zucchini (chopped)
1/4 onion (minced)
1t ginger
1T garlic (minced)
1 T soy sauce
1/8 t pepper
2 T olive oil
1 c rice
1 1/4 c water
1 T sesame seeds
1/4 c peanuts (whole or chopped)

In a large skillet, heat oil over medium high heat.  Add veggies & cook until they are just starting to get soft.  Add ginger, soy sauce, pepper, rice & water.  Bring to a boil.  Turn the heat down, cover and simmer for 15-20 minutes or until rice is done.  Sprinkle with sesame seeds and peanuts.
