I like protein for breakfast! Here is a delicious recipe that will satisfy you until lunchtime. Have a wonderful Wednesday!
Bacon Scramble:
1 pkg bacon
6 eggs
salt & pepper to taste
1/4 c cilantro
1 T minced onion
1 T parsley
1/2 c shredded cheese
1/2 c your favorite salsa
Cook the bacon according to the package directions. Save 1 tablespoon of grease. Crumble the bacon and set aside. Heat up the grease in a skillet and add the eggs, salt & pepper, cilantro, onion, & parsley. Cook until the eggs are almost done. Add the bacon, salsa & cheese. Stir together until the cheese is melted. Serve with toast.
