Years ago, I use to go to the Farmers Market on my lunch break. There was a stand that sold street tacos for $1. They were SO good!!! Every once in a while I crave them. My recipe isn't as good as the ones at the Farmers Market but, it comes pretty close.
Street Tacos:
flank steak
1 T olive oil
1 t minced garlic
1/2 t ginger
1 T soy sauce
1 t sugar
1/4 c green salsa verde
corn tortillas
3/4 c shredded cheese
1 c shredded cabbage
Slice the steak against the grain into really small pieces. Heat the olive oil over medium heat in a skillet. Add the steak, garlic, ginger, soy sauce & sugar. Cook until there is no pink left on the meat. Pour in the salsa and cook another 5-6 minutes or until the salsa cooks down. Turn off the heat & let rest in a large bowl. Wipe out the skillet with a paper towel and return to heat. Heat the corn tortillas until soft. (About 2-3 minutes per side). Place meat mixture, cheese and cabbage on a tortilla and eat immediately. Yum!
